I found this recipe on low-carb-news.blogspot.com and thought it would be a great addition to a family gathering we attended recently — everyone loved it, and it disappeared quickly, despite the fact that we doubled the recipe that day. We enjoyed it so much I thought I’d make it again, and this time we picked up some low-carb crackers to test with it and give our review. I’ll list the brands and our opinions below, but here’s the dip recipe. It’s very addictive, we really love it.

Ingredients:
1 tbsp bacon fat
3/4  cup chopped onion (I use red onion)
5 oz (150g) cream cheese
2/3  cup mayonnaise
2 tbsp grated Parmesan cheese
1 cup grated sharp Cheddar cheese

Preheat oven to 350°F (180°C).  In non-stick frying pan in bacon fat, cook onion until brown and caramelized.  Start by cooking over medium heat and then lower the heat until the onion is ready.

The original recipe says to use a food processor to process cream cheese, mayonnaise and Parmesan cheese, but I can’t see the point in dirtying the food processor for this dip – everything melts together wonderfully in the oven anyway, so we didn’t bother but you can if you like.  Then add Cheddar cheese and process briefly (or stir through).  Stir in caramelized onion.  Scrape into a 9-inch shallow pie dish and smooth over the surface with the back of a dessert spoon.  Place in oven 10 to 15 minutes, or until hot and bubbly.  Serve with low-carb crackers, cheese chips, pork rinds or vegetable sticks.

Helpful Hint:  This can also be heated in the microwave oven.

Yield:  8 servings, 1 serving, 266.8 calories, 6.5 g protein, 25.8 g fat, 0.2 g fiber, 2.1 g net carbs

Low-Carb Cracker Review

We tried this dip with two low-carb crackers we found online here in Australia:

1) Andre’s Snack Healthy Crackerbread – Sesame flavour
2) Fine Fettle Flats – Onion and Sunflower flavour

Both were nice, tasty crackers – the Crackerbread was much firmer and stood up well to the dip. These have 4g carbs per serve and 4 serves per package. The sesame flavour was strong and with other dips or even just cream cheese spread on them they were lovely, but I thought the sesame flavour didn’t go as well with this dip.

The Fine Fettle Flats are an Australian product, and they’re dried, not fried or baked – so the texture was just a bit softer, meaning you have to be careful or they might break off in the dip, but we didn’t care – these were the winner hands down for flavour, they were so tasty. These were also the lower carb choice, with just 2.8g carbs per serve, and 5 serves per package.
