Low Carb Blackberry Chipotle Jam.
When it comes to keto, jam definitely isn’t the first thing that pops into your head. But, making some new sweet sauces can definitely be within your grasp. To top it all off, you can add plenty of fats to really bring the macros up to par. We use MCT Oil here because of the liquid properties that it has. When you store the jam in the fridge, it will continue to stay as a sauce and not harden up (as it would if you used coconut oil).
From topping a cheesecake to glazing slow roasted meats and everything in between, this jam will have a use for just about every recipe you can think of. It’s a new staple in my house and is slowly replacing the BBQ Sauce that I usually make.

Ingredients.
1. 8 ounces blackberries.
2. 1 ½ whole chipotle peppers in adobo sauce.
3. ¼ cup erythritol.
4. 8 drops liquid Stevia.
5. ¼ cup MCT oil.
6. ¼ teaspoon guar gum.

Instructions.
1. Add blackberries to a pan over low heat. Allow them to cook slightly so that they become soft – about 5 minutes.
2. Add chipotle in adobo to the mixture.
3. Add erythritol and stevia to the pan and mix into the blackberries. Crush blackberries using a spoon or fork and mix together again.
4. Add MCT Oil to the pan and turn heat up to medium. Allow the jam to boil, then reduce heat to low and simmer for 6-8 minutes.
5. Add guar gum to the jam and mix thoroughly. Continue to mix for about 1-2 minutes or until mixture thickens.
6. Strain seeds from the jam using a colander and the back of a metal spoon. Discard seeds when finished.
7. Enjoy your jam! Spread it on just about everything to add a delicious new flavor component.

This makes a total of 10 tbsp. of Low Carb Blackberry Chipotle Jam. Each tablespoon comes out to be 50.9 Calories, 4.31g Fats, 1.17g Net Carbs, and 0.32g Protein.

This recipe comes from the Food Network magazine. To me the recipe is overly sweet so I replaced the 1.5 C of sugar with 4 tablespoons of Swerve. While the alcohol does cook out in this recipe, you can eliminate the wine and replace it with water.

Servings: ~ 8
Total carbs per serving: 6.1g

Ingredients:
12 oz. cranberries, fresh or frozen
2 to 4 tbsp. Swerve or other low carb sweetener (depending how sweet you like your sauce)
½ C Dry red wine
Water

Spice Pouch Ingredients:
1 Cinnamon stick
1/4 tsp. Whole black peppercorns
3 Wide strips orange peel from small orange
3 Whole cloves

Directions:
1. Wrap the cinnamon stick, peppercorns, orange peel and cloves in a small pieces of cheesecloth and tie close with kitchen twine.
2. Combine cranberries, sweetener, wine and about 1/3 cup of water in a medium saucepan. Add the spice pouch and bring to a simmer over medium heat. Continue cooking, stirring occasionally, until the berries burst and the sauce thickens – about 20 minutes. If the sauce becomes too bubbly, you may have to lower the temperature slightly – just keep it simmering.
3. Transfer the cranberry sauce to a bowl and refrigerate at least 3 hours to overnight; discard the cheesecloth bundle.
4. Serve chilled.

Cooking Notes:
1. You may need to more water if the sauce becomes too thick. I’d recommend adding a couple of tablespoons at a time.
2. Taste the sauce as it is cooking to determine if you need to add more sweetener. I’d recommend adding no more than 1 tsp. at a time. Just remember to adjust the carb count (4 tbsp. of Swerve adds a total/net 2.5g of carbs or 0.3g per serving).

INGREDIENTS:

1-1/2 cups (375 ml) granulated sugar

1 pouch (45 g) BERNARDIN® Freezer Jam Pectin

4 cups (1000 ml) crushed raspberries

DIRECTIONS:

Wash and rinse 5 BERNARDIN® Freezer Jars and lids or 250 ml mason jars and closures.

Wash, crush and measure raspberries.

In a large mixing bowl, combine Freezer Jam Pectin and sugar until well blended. Stir fruit into pectin-sugar mixture; stir 3 minutes.
