These muffins are lower in carbs and much better for you than a traditional muffin. Depending on your taste, you may want to add a little more stevia or add berries to the muffins when you serve them. They also go really well with whipped cream.

-1/2 cup or 60 g coconut flour
-1/2 cup or 110 g light flavoured olive oil
-5 tbsp or 90 g powdered stevia
-1/3 cup pure, pouring or thickened cream with 35% fat
-3/4 tbsp baking powder
-1 tbsp cacao or cocoa powder
-1 tsp vanilla extract
-4 eggs
-100 g dark chocolate broken into pieces. If using 70%, the carbs will be higher but the muffins a bit sweeter. If using 90%, the carbs will be lower but the muffins quite a bit bitter and you may need to add berries to go with them

-pre-heat oven to 165 degrees C or 330 degrees F
-line a 12 hole muffin tray (7 cm diameter) with silicone moulds or patty pan cases
-mix coconut flour, stevia, cacao (cocoa) powder and baking powder in a bowl. Make sure there are no lumps of coconut flour
-in a separate bowl or jug, whisk eggs, olive oil, cream and vanilla
-add wet ingredients to dry. Make a well in the dry ingredients and add the wet, mixing until just combined. Move quickly from this point. The coconut flour begins to soak up the liquid the longer the mix is left
-1/2 fill each muffin hole with a small amount of mix, then add a piece of the broken up chocolate to each muffin. Top the muffin holes up with more mix. Finally, add a piece of the chocolate to the top of each muffin
-place into oven for 15-25 minutes. To check when muffins are done, press the top of the muffin, when it springs back, it is done!

If muffins are not eaten the day they are made, freeze them individually in cling wrap. They keep really well in the freezer and re-heat really well in the microwave

1/2 tsp baking powder (optional)

Muffin Ingredients:

3 cups almond flour
1 heaping teaspoon baking soda
1/2 teaspoon kosher or sea salt
3 large eggs
15 oz can of Pumpkin Puree
1/2 cup sugar equivalent substitute * I used 1 tbsp Stevia*
4 tablespoons melted butter
1 tablespoon pure vanilla extract
1tablespoon pumpkin pie spice
1/2 cup pecans

Cream Cheese Filling:
4 oz cream cheese softened
2 tbsp of heavy whipping cream-may need more to help it combine
1 packet of stevia
1 tsp of vanilla
*mix all filling ingredients together until well combined*

How to prepare the muffins:

Whisk together the almond flour, baking soda and salt in a large bowl; set aside. In the bowl of a stand mixer (or another large mixing bowl if you’re using a hand mixer), mix the eggs, pumpkin, stevia, butter, pumpkin pie spice and vanilla on medium speed until well blended. Mix in the almond flour mixture in three additions on low speed, mixing well and scraping down the sides after each addition. Stir in the pecans

Spoon half the batter in the prepared cupcake liners and top with a spoonful of cream cheese mixture. Top with a remaining spoonful of muffin batter. Bake for 45 to 50 minutes, or until a knife inserted in the center comes out clean.
